Ingredients:
- 200g mushrooms, cleaned and sliced
- 1 capsicum (bell pepper), thinly sliced
- 2-3 green chillies, finely chopped
- 1-inch ginger, grated
- 1/2 cup tomato ketchup
- 2 tablespoons soy sauce
- 1 tablespoon chili sauce (adjust to taste)
- 1/2 cup grated cheese (cheddar or mozzarella)
- Salt to taste
- Black pepper to taste
- 2 tablespoons oil
- Fresh coriander leaves for garnish
Instructions:
- Heat oil in a pan over medium heat. Add grated ginger and chopped green chillies. Sauté until fragrant.
- Add sliced mushrooms and sliced capsicum. Stir-fry for a few minutes until the mushrooms are cooked and the moisture evaporates.
- In a bowl, mix together tomato ketchup, soy sauce, and chili sauce. Pour this sauce mixture into the pan. Stir well to coat the vegetables.
- Season with salt and black pepper according to your taste. Allow the mixture to cook for a few more minutes until the sauce thickens and coats the mushrooms and vegetables.
- Preheat your oven to 180°C (350°F).
- Transfer the mushroom mixture to a baking dish. Sprinkle grated cheese evenly over the top.
- Place the baking dish in the preheated oven and bake until the cheese is melted and bubbly, and the edges are golden brown.
- Once done, remove from the oven and let it cool for a few minutes.
- Garnish with fresh coriander leaves.
