CHHANAR PAYESH (Recipe)
(Ingredients)
- 10 cups milk
- 1 liter buffalo milk
- 2-3 tablespoons lemon juice
- ¼ cup sugar
- ½ teaspoon green cardamom powder
- 1 tablespoon blanched and sliced pistachios
- 1 tablespoon slivered almonds
( Method )
- Boil milk in a non-stick pan on low heat until it gets thick.
- Boil buffalo milk in another pan. Turn off the heat, add lemon juice, and stir until it curdles.
- Strain through a muslin cloth over a strainer and put the cloth in ice-cold water. Squeeze out excess water.
- Transfer the chhana (curdled milk) onto a plate and mash with your hands.
- Add sugar and cardamom powder to the reduced milk, mix well, and cook until the sugar melts. Add pistachios and almonds, then turn off the heat.
- Scrape off the sides and bottom of the pan into the milk, add chhana, and mix well.
- Transfer the mixture into individual bowls and refrigerate to chill.
- Serve it chilled. 🍨🥄
