 CHHANAR PAYESH (Recipe)


(Ingredients

  1. 10 cups milk 
  2. 1 liter buffalo milk 
  3. 2-3 tablespoons lemon juice 
  4.  ¼ cup sugar
  5.  ½ teaspoon green cardamom powder 
  6.  1 tablespoon blanched and sliced pistachios
  7.  1 tablespoon slivered almonds  


( Method )


  1. Boil milk in a non-stick pan on low heat until it gets thick.
  2. Boil buffalo milk in another pan. Turn off the heat, add lemon juice, and stir until it curdles.
  3. Strain through a muslin cloth over a strainer and put the cloth in ice-cold water. Squeeze out excess water.
  4. Transfer the chhana (curdled milk) onto a plate and mash with your hands.
  5. Add sugar and cardamom powder to the reduced milk, mix well, and cook until the sugar melts. Add pistachios and almonds, then turn off the heat.
  6. Scrape off the sides and bottom of the pan into the milk, add chhana, and mix well.
  7. Transfer the mixture into individual bowls and refrigerate to chill.
  8. Serve it chilled. 🍨🥄
