Sandesh (Recipe)
(Ingredients)
- 2 liters of Cow Milk
- 50ml/3½ tbsp of Vinegar
- 100ml/½ cup of Water
- 2 liters of Water
- 60gms/5 tbsp of Sugar (fine grain)
- 1½ tbsp of Corn Starch
- Dissolved Saffron for garnish
(Process)
- Mix vinegar with 100ml water.
- Bring milk to a boil and turn off the heat.
- Add diluted vinegar and stir until the milk splits.
- Add water to cool the Chenna down, then strain it using a muslin cloth.
- Squeeze out the water and place the chenna on a large plate.
- Add sugar and rub it with your palm to smoothen out any grains.
- Heat a pan on low heat, add chenna, and cook for about 5 minutes or until it comes together like a dough.
- Remove to a plate, cool it down, sprinkle cardamom powder, and mix.
- Shape into small balls and place on a platter.
- Touch the sandesh with some dissolved saffron and serve. 🍬🌟
